The Brand
A small home bakery based in Colchester, specialising in Swiss meringue macarons. Our ganache and French buttercream fillings are made with natural ingredients that are suitable for vegetarians and packed full of flavour. All packaging materials are recyclable including the polypropylene bags and packing materials. We make a conscious effort to minimise waste and often upcycle cardboard for postal packages.
A Bit About Me
British born with Chinese Mauritian heritage, raised in Essex. I dropped out half way through Uni doing Biomedical Science as I didn't feel happy on that career path and wanted to pursue something where I would feel impassioned. I have always loved cooking and making sweet stuff even though I don't have a sweet tooth myself!
In 2019, I graduated with a Diplome de Patisserie from Le Cordon Bleu London and shortly after I got my first job as a Bakery Chef in London. After a tough 5 months, coronavirus came a-knocking and my dad had fallen seriously ill with it. His situation took a turn for the worse and our family made the decision that it would be best for me to move back to Colchester.
His initial journey to recovery and drive to live life to the fullest is what inspired the leap into this new adventure. In 2024, his health and quality of life declined steadily until sadly on 25th July 2024 my dad passed away peacefully. A charming, astonishingly intelligent, generous, cheeky-humoured extrovert, he had an incredible knack for making friends anywhere and everywhere. Moreover, he was completely devoted to his family. He supported me in all my dreams and was a huge advocate for me attending Le Cordon Bleu. Even though he is not with us physically anymore, I hope to carry his resilience, humour and generous spirit forward with me in life.
So why macarons? When in Brighton, one of my best friends was buying macarons and asked her brother if he would like any, he replied ''Can't I just get them from Christina?'' (Well now he can!) They've been something I've wanted to master for a long time. So I tried a recipe online and like some kind of fluke, I produced a perfect batch! And there the idea for this business was born. If I said every batch after that also came out perfect, I would be lying!
There were a handful of months where I had changed my oven and baking trays and to my frustration my macarons were coming out fragile or cracked. Definitely not worthy of selling! So I took a break, worked for an events catering company but now I'm back and saying yes to as much as possible. Some of you might be reading this for the first time if you saw me at Essex County Christmas Fair. If so, Hello! What an incredible event to be a part of and I'm excited to jump into the world of markets and fairs more! (Now to end with the obligatory) Watch this space! x
